Green Truffle Pizza with Pineapple Kale-Aid:
- 1 10 in. whole wheat vegan tortilla
-4 oz. tofu marinated in garlic herb viniagrette of choice
-2 oz. caramelized onions
-3 oz. mushrooms, sauteed with shallots
-1/2 oz. baby arugula
-1/2 tsp. white truffle oil
-salt, pepper & chili flakes to taste
1. Heat over to 500 degrees
2. Puree tofu and caramelized onions to make a spread. Season to taste with salt, pepper and chili flakes.
3. Top tortilla with spread and mushrooms. Bake in oven until golden brown and crispy. Top with arugula and truffle oil.
-1/2 bunch kale (stems removed)
-2 c. pineapple (grilled)
-1 tsp. lemon
1. Combine all ingredients in blender/juicer. Enjoy!
